Keeping it Fresh: Growing a Herb Garden
I close my eyes and breathe in the fragrant scent as I steep fresh mint leaves for a rejuvenating cup of tea. I am immediately transported back to last summer when we picked mint from the garden. When I open my eyes, I see early signs of spring in my backyard but it will be some months before I can pick fresh mint outside. For now, I will enjoy the selection of herbs growing on my windowsill.
There are many positive effects associated with growing plants indoors. There is some evidence that gardening—inside and outdoors—can reduce stress levels. Researchers are now also using horticultural therapy for patients with depression, anxiety, and dementia. In fact, in 2019 doctors at a medical clinic in Manchester, England began prescribing potted plants to patients struggling with mental illness!
There is also evidence that plants may help with concentration, productivity, and faster recovery following illness or surgery. While there is some contention about some of these claims, the overall consensus is that there are benefits associated with gardening and keeping plants in your living space.

The Benefits of an Indoor Herb Garden
Beyond the numerous advantages of having greenery in your home, herb gardens offer additional rewards.
Exciting Flavors
Nothing elevates a recipe like fresh herbs. However, fresh herbs from the grocery store have already lost some of their flavor and nutrient value during transit and while sitting in the produce section. There’s no risk of losing flavor when the plant is already in your kitchen!
Better for your budget
Dried herbs can be expensive and fresh herbs from the grocery store are even more costly and recipes often call for only a small amount so most of what you bought wilts and goes bad before you can use it. With a plant growing in your home, you’ll always have exactly the right amount, nothing will go to waste and your dishes will be delicious.
Healthier Options
You will likely be more energized about meal prep and enthusiastic to try healthy new recipes if you have fresh herbs on hand. It will be easy to make old favorites more flavorful and you may be motivated to try new things inspired by the fresh options available in your own home.

What Herbs Should I Plant Indoors?
There are so many options to choose from, but certain types of herbs are more likely to thrive under the care of a green gardener. These include basil, chives, rosemary, oregano, parsley and thyme.
An added benefit of growing your own herbs: you’ll often have far more than you need and these can be great for sharing!
One note of caution: damp soil can lead to mold, which can trigger asthma. It is important to carefully monitor soil moisture.
It is time to sit down for dinner. Tonight, we’re having roast chicken seasoned with thyme, baked potatoes complemented with chives and a salad enlivened with fresh basil and parsley. Dinner never tasted better!
